 1 Litro de leite de cabra (preferencialmente fresco ou pasteurizado, evite o UHT se quiser uma textura mais firme).

2 colheres de sopa de iogurte natural ou de cabra (como "isca" ou fermento) ou 1 saqueta de fermento lรกcteo.

Termรณmetro de cozinha (essencial para nรฃo matar as bactรฉrias).

Panelas, batedor de arame e recipientes de vidro esterilizados.

๐Ÿฅฃ Passo a Passo

Aquecimento:
Aquece o leite em lume brando atรฉ atingir os 82°C a 85°C. Este passo รฉ importante para desidratar as proteรญnas do soro, o que ajuda a dar mais consistรชncia ao produto final. Nรฃo deixes ferver.

Arrefecimento:
Retira do lume e deixa o leite arrefecer atรฉ chegar aos 42°C a 45°C. Podes acelerar o processo colocando a panela numa bacia com รกgua e gelo (banho-maria invertido).

Inoculaรงรฃo:
Numa tigela pequena, mistura a "isca" de iogurte com um pouco do leite morno atรฉ ficar homogรฉneo. Depois, verte essa mistura de volta para a panela de leite e mexe suavemente com o batedor de arame.

Incubaรงรฃo (O Segredo):
Coloca a mistura em frascos de vidro e mantรฉm a temperatura estรกvel (cerca de 43°C) por 8 a 12 horas. Podes usar:

Leite UHT: Se usares leite de caixa (UHT), podes saltar o passo 1 (aquecer atรฉ 82°C), aquecendo-o diretamente atรฉ aos 43°C, mas o resultado costuma ser menos consistente.

Dica Prรกtica:

Se esta for a tua primeira vez, reserva sempre umas 2 ou 3 colheres de sopa do iogurte que acabaste de fazer. Podes congelar essa porรงรฃo ou guardรก-la no frigorรญfico para servir de base para o teu prรณximo lote!

Here is the step-by-step guide for you to make natural, artisanal yogurt:

๐Ÿฅ› Ingredients & Equipment

1 liter of goat milk (preferably fresh or pasteurized; avoid UHT if you want a firmer texture).

2 tablespoons of natural yogurt or goat yogurt (as a starter culture) or 1 sachet of lactic ferment.

Kitchen thermometer (essential to avoid killing the bacteria).
Pot, whisk, and sterilized glass containers.

๐Ÿฅฃ Step by Step

Heating:
Heat the milk over low heat until it reaches 82°C to 85°C. This step is important to denature the whey proteins, which helps give more consistency to the final product. Do not let it boil.

Cooling:
Remove from heat and let the milk cool down to 42°C to 45°C. You can speed up the process by placing the pot in a bowl with water and ice (reverse bain-marie).

Inoculation:
In a small bowl, mix the yogurt starter with a bit of the warm milk until smooth. Then pour this mixture back into the pot of milk and gently stir with the whisk.

Incubation (The Secret):
Pour the mixture into glass jars and keep the temperature stable (around 43°C) for 8 to 12 hours.

You can use:

UHT Milk:
If using UHT milk, you can skip step 1 (heating to 82°C), heating it directly to 43°C instead—but the result is usually less firm.

Practical Tip:

If this is your first time, always save about 2 or 3 tablespoons of the yogurt you just made. You can freeze this portion or keep it in the fridge to serve as the starter base for your next batch!
